Fill up smartly before Super Bowl feeding frenzy

Whether one watches the Super Bowl gathered around a TV with friends and family at home or with strangers in a sports bar, one thing is likely on everyone’s mind: nachos.

The delicious crunchy, cheesy, covered chips -- and plenty of other treats such as wings, pizza and high-calorie alcoholic beverages -- are synonymous with Super Bowl-watching and can make it tough on those trying to stick with New Year’s resolutions.

The important thing for healthy eaters to remember is that “savory Super Bowl snack” doesn’t have to mean “bad for you.”

The recipes below were developed by Samantha Stephens, chef and owner at New York City’s OatMeals oatmeal bar and Quaker’s creative oatmeal officer. The bowls feature familiar flavors such as Buffalo-style hot sauce and bacon, in addition to heart-healthy steel cut oatmeal, which adds filling fiber.

Seahawks and Patriots fans might do a double take at first -- but chances are they’ll ask to take home leftovers.

Loaded OATato Bowl

Ingredients

  • 1 cup prepared Quaker Steel Cut Oatmeal*
  • 1/4 cup shredded cheddar cheese
  • 1 Tbsp crumbled crispy bacon
  • 1 Tbsp low-fat sour cream or Greek yogurt
  • 1/2 tsp diced fresh chives
  • Fresh ground black pepper to taste

*Or try 1 cup Quaker Quick 3-Minute Steel Cut Oats

Directions

Prepare oatmeal as directed. Top with cheddar cheese, bacon and sour cream. Sprinkle with fresh chives and season with salt & pepper.

BuffalOATMEAL Bowl

Ingredients

  • 1 cup prepared Quaker Steel Cut Oatmeal*
  • 1/3 cup diced cooked chicken breast
  • 1 Tbsp crumbled blue cheese
  • 2 tsp bottled Buffalo sauce (any variety)
  • 1 Tbsp diced fresh celery
  • 1 Tbsp shredded carrots

*Or try 1 cup Quaker Quick 3-Minute Steel Cut Oats

Directions

Prepare oatmeal as directed. Top with chicken breast, blue cheese, and drizzle with Buffalo sauce. Sprinkle with celery and carrots.
