One versatile food that has become wildly popular in the keto/low-carb community is the chaffle. A portmanteau of “cheese” and “waffle,” basic chaffles are primarily a combination of egg and cheese made on a mini waffle maker to be used in place of bread or buns, or eaten as breakfast. Creative foodies have transformed chaffles into numerous sweet and savory recipes.
If you feel like you’re missing out on all of the pumpkin spice treats that are everywhere during autumn, Atkins has a pumpkin spice chaffle that fits the bill. It’s low carb, keto-friendly, gluten-free, and even peanut- and tree nut-free.

To make the chaffle, you need some shredded mozzarella, an egg, some canned pumpkin (make sure it’s pure pumpkin puree, not pumpkin pie filling, which has sugar!), sugar-free maple syrup, coconut flour, pumpkin pie spice and baking powder.
After mixing the ingredients, pour them into your waffle maker and wait. While mini waffle makers work great, you can use a traditional waffle maker, as well. When it’s hot, golden and crisp, you can dig into your delicious fall chaffle.
