Recipe for Tonkotsu Ramen, courtesy of Sam Suzuki, the co-owner of "Shout Karaoke"
4 cups Tonkotsu Ramen Broth
8 oz fresh ramen noodles
12 oz cooked, sliced Char Siu style pork belly
4 oz marinated sliced bamboo shoots
4 green onions, thinly sliced
2 sheets toasted nori
4 each soft cooked eggs, peeled
Bring broth to a boil and hold very hot. Cook noodles for about 2 minutes in boiling water. Drain noodles very well and divide between four bowls. Pour hot broth over noodles. Top each serving with warmed pork belly slices, bamboo shoots, scallions, egg and toasted nori. Serve immediately while very hot.
