Italian Green Bean Salad

 

INGREDIENTS

  • Handful of Green Beans
  • ½ Heirloom Tomato
  • 5 Cherry Tomato halves
  • 2 oz sliced black olives
  • 4 sticks of cucumber
  • 2 oz of sweet Vidalia onion
  • 2 oz red wine vinaigrette
  • Cracked pepper

 

PROCEDURE

  •  Blanch handful of green beans for 3-4 minutes , then chill
  • Add heirloom tomato cut into chunks, cherry tomato halves, sticks of cucumber (each cut in 4 pieces, sliced black olives, and sweet onion slices
  • Toss with red wine vinaigrette
  • Finish with cracked pepper on top


SCALLOP PANZANELLA

 

Limoncello Mustard Sauce

  • Whole grain mustard
  • Dijon mustard
  • Garlic
  • Lemon juice
  • Lemon zest
  • Blood orange zest in juice
  • Extra virgin olive oil

 

Smoked Polenta Croutons

  • Smoked polenta tomatoes
  • Cream
  • Ricotta
  • Parmesan

 

On Plate

  • Cut cherry tomatoes
  • Shaved cucumbers
  • Pan seared scallops
  • Parmesan basil crisp
  • Pearl onions
