On Saturday, Feb. 18, thousands will gather at Mizner Amphitheater for festivities, food tastings and a BBQ contest judged by celebrity chef Bobby Flay.

Housemade Chorizo
- 35 pounds coarse ground pork butt
- 1 bottle cold white wine
- 1 1/4 cups paprika
- 3/4 cup salt
- 1 cup minced garlic
- 3/4 cup cayenne pepper
- 1/3 cup cumin
- 1/3 cup dried oregano
- 6 teaspoons ground black pepper
Mix together all the spices. Mix spices into the ground pork.
Chimichurri Aioli
- 2 whole shallots
- 2 tablespoons garlic
- 4 limes juiced
- 4 bunches parsley
- 6 bunches cilantro
- 4 tablespoons house made Worcestershire
- 4 tablespoons rice wine vinegar
- 2 teaspoons salt
- 2 teaspoons sugar
- 2 teaspoons red pepper flakes
- 1 1/2 cups oil
- 4 tablespoons cumin
- 2.5 cups mayo
Rough chop garlic and shallot. Mix together in the food processor until it is a smooth puree. In a mixing bowl, whisk puree with mayo until incorporated. Happy happy pork rind sauce!
