Watermelon Granita
Yield 4 portions

Watermelon juice  2 cups
Lime juice   ¼ cup
Sugar    ¼ cup
Water    ¼ cup

1. Process the watermelon in a blender.
2. Dissolve the sugar into the water. Mix all ingredients and freeze for 4 hours.

Tarragon Greek Yogurt
Greek Yogurt   1 cup
Tarragon leaves 3 sprigs
Honey (optional) 1 Tablespoon

1. Pull the leaves out of the tarragon stems. Discard the stems. Chop the tarragon slightly
2. Mix with the yogurt.

Assembly:

1. Add 1 dolop of tarragon yogurt on a bowl.
2. Scrape the granite with a fork and add a hefty amount ontop of the yogurt.
3. Garnish with watermelon chunks.
4. Enjoy!
