Pork Tenderloin with Cherry Glaze
Ingredients
1 pork tenderloin
1 onion
3 celery
2 cups baby carrots
16oz dry red wine
2 cups dried cherries
2 shallots
3/4 cup brown sugar
1/4 cup butter
Instructions- preheat oven to 350
Season pork with salt and pepper
Pan sear pork on all sides
Dice your onions and celery. Add to roasting pan.Add your baby carrots.Place your pork into pan.Add your red wine roast for 35 min.in a saucepan, Add dried cherries, Shallots, brown sugar and butter. Then add 1 cup of your pork drippings to saucepan.reduce until a thick consistency is achieved. Slice pork and place on a platter with carrots and pour your cherry glaze over pork.
