Signature Vanilla Batter Recipe

Ingredients:
2.5 Cups All Purpose Flour (Prior to Sifting)    
1 Tsp Baking Soda
1 Tsp Baking Powder   
1 Tsp Salt
1 ¾ Cups Sugar
½ Cup Boiling Water
1 Cup Vegetable Oil
2 Eggs
1 Cup Buttermilk
2 Tsp Pure Vanilla Extract
Directions:
In Medium Bowl whisk together:
Flour, Baking Soda, Baking Powder, and Salt
Set Aside
In Large Bowl combine Sugar and Vegetable Oil
Mix in Eggs, Buttermilk and Vanilla
Stir in Boiling Water
Combine Wet Ingredients with Dry a little at a time, mixing after each addition just until combined;

Variations:
1. Add Colored Sprinkles and stir in batter to make Funfetti Batter
2. Add Chocolate Chips and stir in batter to make Chocolate Chip Batter
3. Add Blueberries or Cranberries (fresh or frozen) to make fruity batter

Place Liners in Cupcake Pan; Use #16 Scoop to fill liners (Tip: you can use ¼ Cup measuring Cup if do not have scoop)
Bake at 325 -350 degrees for 25 – 30 minutes. Cupcakes are done when you lightly touch top and cake springs back
Let cupcakes cool completely on cooling rack prior to frosting
Yields: 18- 24 Cupcakes
