Black Truffle Chicken Cannelloni and Farro

Ingredients for the Chicken cannelloni:

  • 7oz Organic Chicken breast
  • 1 large prosciutto slice
  • 1 table spoon of black truffle
  • 1oz mozzarella
  • 2 table spoon of 24 hous Veal Demi glaze

Ingredients for the Farro:

  • 7 oz farro
  • 1/4 cup peas
  • Cup fresh spinach
  • 1/2 cup Cremini mushroom
  • 24 hours veal Demi glaze
  • Olive oil

Directions:
Preheat the oven to 500 degrees F (190 degrees C).
Pound the chicken real thin, lay over the prosciutto, the black truffle spread and the mozzarella. Roll everything and sear till brown. Pour the the Demi glaze over the roll and bake it for 10 minutes.

On a different pan heat some olive oil, add the peas, spinach, cremini mushroom,pre cooked farro and the Demi glaze.

To serve spread the farro mix on a plate and lay the The chicken roll over
