1 LB. SKINLESS, BONELESS CHICKEN BREAST ... CUT INTO CHUNKS
1 TBLS. OLIVE OIL
7 CUPS CHICKEN BROTH
1 PKG. FROZEN BROCCOLI FLOWERETTES
2 LG. CARROTS ... SLICED
1/2 RED PEPPER ... CHOPPED
1/2 TSP. LEMON PEPPER
1 TSP. GARLIC GRANULES
1 TBLS. DRIED TARRAGON
1 CUP INSTANT RICE

Directions
IN A LARGE KETTLE BROWN CHICKEN IN OIL. ADD REMAINING INGREDIENTS ... EXCEPTRICE.

BRING TO A BOIL, REDUCE HEAT AND SIMMER UNCOVERED FOR 30 MINUTES. ADD RICE AND SIMMER FOR AN ADDITIONAL 15 MINUTES OR UNTIL RICE IS TENDER ... STIRRING OCCASIONALLY.
