'Beat the heat' summer cooking - no grill needed!

Sweet-and-sour chicken

  • 1-1/2 cups sliced carrots
  • 1 green bell pepper, chopped
  • 1 medium onion, chopped
  • 2 tablespoons quick-cooking tapioca
  • 3-pound chicken, cut into pieces
  • 8-ounce can pineapple chunks, in juice
  • 1/3 cup brown sugar
  • 1/3 cup vinegar
  • 1 tablespoon soy sauce
  • 1/2 teaspoon instant chicken bouillon
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon ground ginger
  • 1 teaspoon salt
  • cooked rice, for serving

Place first three ingredients into the bottom of a slow cooker. Sprinkle with tapioca. Add chicken. In a separate bowl, combine pineapple, brown sugar, vinegar, soy sauce, bouillon, garlic powder, ginger and salt. Pour over chicken. Cover. Cook on low for 8 hours. Serve over cooked rice. -- Patty, Idaho
