Sweet Potatoes Casserole
Sweet Potatoes, Pineapple Juice, Butter, Granola, Brown Sugar

Ingredients:
3 large or 4 small Sweet potatoes, washed
½ cup Pineapple juice
3 tablespoons Butter, cut into little cubes
2 cups Granola
¼ cup Light brown sugar

Place sweet potatoes in a pot, cover with water, add a little salt, cook until fork tender, remove from pot. 

Let sweet potatoes cool for a few minutes until you can handle them.  Peel off the skins. 

Dice the sweet potatoes into ½” cubes.  Place the diced sweet potatoes into a casserole.  Add pineapple juice. 

Top with butter cubes, granola, and light brown sugar.  Cave casserole, and bake at 350* for 30 minutes.  Remove lid and bake for 10 more minutes.  Enjoy!
