(WXYZ) - Here is the "sweet corn risotto" recipe. The recipe comes from Chef Franz Josef Zimmer from 42 Degrees North, located inside the Detroit Marriott at the Renaissance Center.
Yield: 8 Portions
Ingredients:
8 oz. aborio rice
1/2 fluid oz. olive oil
2 oz. sweet corn puree
1 1/2 pints chicken stock
2 tablespoons yellow onion minced
1 teaspoon minced garlic
1 teaspoon fresh lemon juice
kosher salt to taste
black pepper to taste
1 cup heavy cream
1 cup shredded parmesan
Garnish:
1 granny smith apple, peeled and diced
4 oz. pancetta, finely diced, sauteed and drained
Procedure:
put the olive oil in the saute pan
add the rice
stir until the rice is heated through
add the onion and garlic and saute until translucent
add the chicken stock one cup at a time, only adding when the previous amount is absorbed
add the lemon juice
when rice is nearly done, add the sweet corn puree, cream and parmesan cheese
season to taste
arrange in dish garnish with the diced apples and pancetta.
