Grilled Potato and Green Bean Salad with Grain Mustard Dressing
(serves 4)
3 small red bliss potatoes – slice into ¼ inch pieces
2 cups cleaned and blanched green beans
½ lemon
1 T grain mustard
½ T Dijon mustard
2 T crème fraiche (or sour cream)
extra virgin olive oil
salt and pepper to taste
1) Season potatoes with salt, pepper and olive oil. Grill for two minutes per side. Turn for an additional minute if necessary. Remove from grill and squeeze fresh lemon juice over the top.
2) Toss with green beans, mustards, crème fraiche and extra virgin olive oil. TASTE.
