Thank you for joining us for our Thanksgiving Morning Segment.

We had Chef David Pantone from the Florida Culinary Institute here this morning to show us some tips for a quick and easy Thanksgiving dinner.

  1. Turkey and Gravy – (5+5=10 ingredients)
    (Turkey, Poultry Seasoning, Carrots, Celery, Onion, Chicken Stock, Butter, Wondra sauce thickener, salt, and pepper)

    Ingredients:

    1 - Turkey, cavity empty, rinsed and dried
    2 teaspoons - Poultry Seasoning
    Salt and Pepper as needed
    1 stick - Butter, melted
    2 quarts - Chicken Stock, homemade or store bought
    4 - Carrots, washed, peeled, cut into large pieces
    3 - Onions, peeled, cut into large pieces
    6 - Celery stalks, washed, cut into large pieces
    As needed – Wondra sauce thickener (between ¼ and ½ cup)

  2. Brussels Spouts with Bacon, Sugar, Fine Diced Red Bell Peppers
    Brussels Spouts with Bacon, Sugar, Fine Diced Red Bell Peppers, Salt, Pepper

    Ingredients:
    About 1 pound Brussels sprouts, washes, stem trimmed, outer leaves removed, cut in half top to bottom
    4 slices Bacon, cut into very small pieces
    ½ Red bell pepper, cut into very small dice
    Pinch of sugar
    Salt and Pepper to taste

  3. Mashed Potatoes with Roasted Garlic and Cheddar Cheese
    Potatoes, ½ & ½, butter, Roasted Garlic, Cheddar Cheese

    Ingredients:
    3 pounds baking potatoes, washed, peeled, cut into 1” cubes

    8 cloves of roasted garlic
    ½ cup half & half, hot (may need a bit more or less depending how thick you like them)
    4 table spoons Butter, room temperature
    1 ½ cups Cheddar cheese, more or less as you please

    Salt and pepper to taste

  4. Orange Glazed Carrots with Dill
    Carrots, Orange Juice, Sugar, Butter, Dill, Salt

    Ingredients:
    1 pound Carrots, washed, peeled, sliced into ¼” disks.

    Orange Juice as needed, about 1 ½ cups)

    1 tablespoon Fresh Dill, chopped

    2 tablespoons Butter

    Pinch of Salt
    Pinch of Sugar – Optional

  5. Sweet Potatoes Casserole
    Sweet Potatoes, Pineapple Juice, Butter, Granola, Brown Sugar

    Ingredients:

    3 large or 4 small Sweet potatoes, washed

    ½ cup Pineapple juice
    3 tablespoons Butter, cut into little cubes

    2 cups Granola
    ¼ cup Light brown sugar

  6. Cornbread Stuffing with Cajun Style Andouille Sausage and Onions
    Cornbread Stuffing Mix, Cajun Style Sausage, Onions, Butter, Chicken Stock, Salt and Pepper

    Ingredients:

    1 stick (4 ounces) Butter

    2 Cajun Style Andouille Sausages, diced (Aidells is my favorite)
    1 Large Sweet Onion Diced
    20 ounces Chicken Stock

    1 Bag (1 pound) Cornbread Stuffing (Pepperidge Farm)
    Salt and Pepper

  7. Spiced Apple Tart with Ice Cream and Maple Syrup (5+5=10 ingredients)
    Puff Pastry Dough Sheet, Vanilla Pudding, Sliced Apples, Apple Pie Spice, Butter, Sugar, Ice Cream, Maple Syrup, and a spoon and a smile)

    Ingredients:
    2 sheets of Puff pastry dough, thawed while in the package
    2 cups Vanilla pudding (homemade, or store bought)
    3 Apples, cored, sliced thin (Granny Smith is my favorite)
    2 table spoons Butter, cut into small pieces
    2 teaspoons of Apple Pie Spice
    ¼ cup sugar (about)
    Vanilla Bean Ice Cream – 1 scoop per person
    ¼ cup pure Maple syrup – as needed
