Chicken Sautee
1 – 2 cooked chicken breast
2 tsp. extra-virgin olive oil
1 tsp. salt
1 tsp. minced garlic
½ tsp. cajun
½ tsp. black pepper
1 C. fresh cut mushrooms
¼ cup lemon juice
¼ cup chopped parsley
Heat the oil in a medium nonstick skillet over high heat. Add mushrooms; cook and stir for two minutes. Add spices, garlic and lemon juice and stir. Add cooked chicken and cover for 2-3 minutes. Add parsley to taste. Remove from heat and enjoy.
