(Makes six servings)
Scratch-Made Ravioli Dough
6 cups all-purpose flour
3 teaspoon salt
9 large eggs
6 tablespoons extra-virgin olive oil
1 tablespoon of pumpkin spice
Pumpkin-Ricotta Filling
2 can pumpkin puree (15 oz) or 3 pounds of freshly roasted pumpkin
16 oz fresh ricotta
2 eggs
Salt and pepper, to taste
Freshly grated nutmeg (about 1 tsp)
Freshly grated Parmigiana (about 1/2 cup)
Brown Butter Sauce
1/2 lb butter
Few fresh sage leaves, roughly chopped
1/4 cup Hazelnuts, chopped
