Grilled shrimp with apple slaw recipe

INGREDIENTS: 4 servings  131 calories/serving

-Peeled and deveined Gulf shrimp (3-4 per person)

-3 tbsp Olive oil

-1 tsp smoked paprika

-2 medium shallot

-2 fresh honey crisp red apples

-3 cups Napa cabbage

-1/2 bunch green onion

-1 large red bell pepper

-1/2 bunch washed cilantro

- 3 fresh lime

-1 tbsp orange blossom honey

-1/2 cup high-quality white wine vinegar

-sea salt and fresh cracked pepper to taste

PROCEDURE:

1- Skewer shrimp and place in shallow dish, sprinkle with 2 tbsp olive oil, salt and pepper, shallot and smoked paprika

2- Peel and slice apples

3- Finely slice Napa cabbage, green onion, bell pepper and cilantro and toss with apple

4-In a separate bowl, combine vinegar, lime, honey and pour over vegetable/fruit mixture and season to taste. Let sit to marinate.

5- Place skewered shrimp on a preheated grill or in a pre-heated grill pan. Grill till caramelized and slightly translucent. Approximately 3-4 minutes per side (depending on the size of shrimp).

6- Place apple slaw slightly off center of the plate and prop cooked shrimp skewer on an angle. Drizzle with remaining olive oil and serve with fresh lime.
